Ingredients
· 1.8 – 2.2 kg choice of meat (round roast or top round)
· One stick of butter
· 4 Tbsp sugar ¾ cup of ketchup
· ¼ cup mustard
· 2 Tbsp garlic powder
· 2 Tbsp onion powder
· Dash of cayenne pepper
· ½ cup of soy
· ¼ cup Worcester sauce
· ¼ cup of wine vinegar (optional)
· Salt and pepper to taste
· Recommended Wood Chips: Mesquite or Mesquite/Apple Mix
Preparation
· Melt butter during a large pot. For the remaining ingredients, you should make sure to blend them.
· Once cool, put during a bag with the meat.
· Let it marinate within the refrigerator for a minimum of 16-24 hours. The longer duration makes it a better one.
· Set smoker to 110°C. Add wood chips to Slow Smoker Attachment and switch on.
· Sprinkle some more BBQ seasoning to taste on meat and cargo into a smoker.
· After a couple of minutes, lower smoker temperature to 80°C and smoke for 3-4 hours.
· Then make sure to re-arrange the pieces that are done by taking them out from the smoker. You can also switch the meat from the right to the left side during this step.
· Smoke for an additional 3-4 hours or until done.
